Allergy-free 'milk' chocolate

Barry Callebaut's lactose-free chocolate products mean that people with lactose or gluten allergy problems, or special dietary requirements (Kosher, vegetarian, vegan), can now enjoy a high quality 'milk' chocolate taste.

The milk powder has been replaced with rice powder, which is easy to digest, gluten-free, lactose-free, and 100% vegetable based. The 14% rice powder (rice syrup, rice oil, rice flour, rice starch) content gives Callebaut Lactose-Free Milk Chocolate Flavoured Coating a light and creamy flavour with no aftertaste. It has the same technical characteristics as traditional Callebaut milk chocolate and so can be melted, tempered and cooled in exactly the same way.

Callebaut Chocolat d'Origine is a range of six high-cocoa content quality chocolates from the Caribbean, Africa and the Far East. Each has its own distinctive flavour determined by the variety of cocoa used, the region it originates from and the way in which the cocoa was harvested. Each Chocolat d'Origine comes from a specific cocoa-producing region with exclusive limited production, and offers connoisseurs a fascinating introduction to the finest that the cocoa bean has to offer.

Barry Callebaut recently acquired the Luijckx company. This means that it can now offer a range of over 2000 chocolate decorations. The latest additions to this staggering range include tailor-made logo decorations, tulip cups in two colour and flavour combinations, real chocolate roses and multi-coloured shavings. The Luijckx range is real proof, if any were needed, that chocolate is a feast for the eyes as well as for the taste buds.
