Natural food products supplier, Groupe Léa Vital, has incorporated Ocean Spray’s sweetened dried cranberries (SDCs) into two of its recipes: Céréales Croustifibre Silhouette and Barre Vital Extreme Resistance.
The muesli and bar use cranberries as an alternative to dried fruit inclusions.
Céréales Croustifibre Silhouette, the new muesli, combines fibre-enriched wheat flakes with 31percent fruit including four per cent cranberries, raisins, dates and apples in a 100percent natural formulation. The tart taste of the cranberry complements the sweetness of the apples, raisins and dates. In the end product, the cranberry distributes evenly throughout the cereal rather than sinking to the bottom of the pack like some denser ingredients. In the Barre Vital Extreme Resistance, the cranberry adds interest via points of rich red colour, contrasts with the white chocolate pieces and works well with the sugar syrup in the bar.
SDCs allow food manufacturers to inject colour and texture into a variety of products, from bagels to breads and cookies to cheese, adding the tart flavour of the cranberry.
Containing no added colours, flavours or preservatives, it is process tolerant and retains shape and texture throughout baking, mixing, blending and pasteurisation.
