Seasoning manufacturer RAPS GmbH & Co KG has developed two new additives: Meat Improver and Optimal.

Meat Improver is a softener for pre-seasoned or marinated meat. It arelaxes' meat structure and activates the meat protein. This means meat juice escape is prevent and the meat becomes tender and succulent. In addition, cooked meats can be kept warm over a longer period without becoming dry.

Optimal is for cooked hams and cooked sausage. Only 5g per Kg total weight is required to increase the pH value which activates the meat protein.
